Hot Trucks/Catering Trucks
Mobile food preparation units, also known as hot trucks, are vehicles used for a variety of food preparation activities. In order to promote the safe and sanitary handling of food, Specialists inspect mobile food preparation units and commissary sites.

Mobile food preparation units are required to obtain a valid health permit prior to operating for business. All mobile food preparation units must return to their commissary after each working day for storage, servicing and cleaning. A commissary is a location, designed for the sanitary storage and servicing needs for mobile food preparation units. Approved commissaries hold valid health permits and receive regular inspections from Division staff.
